There is two ways of demonstrating evolutionary processes in a laboratory today. One technique is the highly controversial (in ethical terms) cloning, and the other is the equally controversial gene splicing, such as using fish or amphibian DNA inserted into canola DNA.

Ask any drug company, which keeps having to produce better and better drugs to fight the bugs which keep evolving resistance to the present drugs.
