Since I am not a biologist/palaeontologist I have to refer you to
experts in the field.
And since neither I nor they are prepared to post thousands of lines
in response to just one question - that's not an exaggeration; it
would take that much to just list all the evidence - the best I can do
is refer you to someone who has written specifically about the
evolution of eyes.
Note the plural; there are many different forms of eyes around.

Try reading the chapter in Richard Dawkins' "Climbing Mount
Improbable" for further information.  It's available from Penguin
books at around $18, so if you can't afford it, there's probably a
copy in your nearest public library.

Incidentally, the evolution of the vertebrate eye is something which I
have taken some interest in since I was diagnosed with glaucoma about
20 years ago.  The poor design of vertebrate eyes is largely
responsible for the prevalence of glaucoma among humans.  As far as I
know, little evidence is available on the prevalence of glaucoma in
non-humans; how do you ask your dog if part of its visual field is
faulty?
